How To Heat Cooked Chateaubriand Roast 


Getting Started

  • Allow 24-48 hours to thaw in the refrigerator, then proceed to heating instructions.

 

Method For Heating In The Oven

  • Pre-heat oven to 350°F.
  • Remove chateaubriand from the packaging and wrap in aluminum foil – be sure to also transfer the juices from the package to the foil for extra flavor.
  • Place the foil wrapped roast on a raised edge baking sheet.
  • Put the roast into the oven and bake 35-40 minutes, until heated to desired temperature: 140 F for rare; 160 F for medium (pink center); and 170 F for well done.
  • Let rest for 10-15 minutes before slicing & serving. Don’t forget, this is fully cooked, so don’t overheat. Also, times & temps will vary between ovens.

Basic Meat Serving Suggestion Tips

  • Standalone meats such as chicken breast or steak allow 6 to 8 ounces per person.
  • Stuffed Meats allow 4 to 6 ounces per person.
  • Meats served in a BBQ Sauce or gravy allow 4 to 5 ounces per person.
  • When serving hamburgers allow 8 ounces per person.
  • Serving sizes vary depending on when a meal is served. Meat portions are generally 25% smaller at lunch time than dinner time.
