How To Cook Your Chateaubriand

To Broil Chateaubriand

  • Thaw completely in the refrigerator.
  • Place meat on the rack of broiler pan, and brush with melted butter.
  • Broil approx. 3½-4 inches from heat, 12-15 minutes: season with salt.
  • Turn: Brush with melted butter.
  • Broil an additional 12 to 15 minutes and season second side.


Outside Grilling Chateaubriand

  • With a hot fire on an outside grill, cooking time is approximately the same as oven-broiling. However, we suggest turning and brushing with butter more frequently.
  • Outside of roast should be browned and inside cooked to your preferred doneness.


We suggest Chateaubriand be prepared to rare or medium doneness.

Basic Meat Serving Suggestion Tips

  • Standalone meats such as chicken breast or steak allow 6 to 8 ounces per person.
  • Stuffed Meats allow 4 to 6 ounces per person.
  • Meats served in a BBQ Sauce or gravy allow 4 to 5 ounces per person.
  • When serving hamburgers allow 8 ounces per person.
  • Serving sizes vary depending on when a meal is served. Meat portions are generally 25% smaller at lunch time than dinner time.
