Offering the best home cooked meats and meals is our mission at Burgers' Smokehouse.  Our Homestyle Cooked Beef Roasts brings back memories of Sunday dinners when our mother slow cooked one for us to enjoy.

The one we offer here results in the same great taste and flavor, by starting with a premium beef roast, seasoning it to perfection, but we then use the Sous Vide cooking method to ensure the best moist & tender roast with plenty of juices left for Au Jus or to make your favorite gravy. 

Also, since it's cooked, you simply need to heat, serve - and enjoy!

Why Sous Vide Cooking?  

Sous Vide is a french method of cooking.  Food is vacuum sealed in airtight plastic bags and cooked at low temperatures in a water or temperature controlled steam environment for longer than normal cooking times.  This means that your roast will be tender and moist and never overcooked.  Plus the natural juices and seasoning remain in the cooking bag to further enhance the flavor of your roast. 

How To Heat Sous Vide Roast

  • Thaw either roast completely in the refrigerator in the bag.
  • Heat in the bag. 
  • Preheat oven to 350°F.
  • Place bag in open roasting pan. Slit top of bag 2-3 times for venting.
  • Do not puncture near the bottom of the bag. This is to prevent the juices from running out.
  • Place in oven. Do not come into contact with heating elements.


Approximate Heating Times:

  • 3 ½ to 4 ½ lb. pork roast: 1 - 1 ½ hrs
  • 4 to 5 lb. beef roast: 1 - 1 ½ hrs
  • 8 to 10 lb.  pork or beef roast: 2 - 2 ½ hrs
  • Carefully remove from oven. Let rest 15 minutes.
  • Open bag with scissors to remove beef or pork roast.
  • Reserve liquid for a flavorful au jus or gravy.
  • Recommended re-heat temp. is 140°F. Appliances vary; heating times are guidelines only.


NOTE: Bag will balloon away from the roasts allowing browning and reducing meat adhesion. The bag will darken in the oven from roasts seasoning and there will be a slight browning of the bag.


Heat Out Of Bag

  • 3 ½ to 4 ½ lb. Pork Roast and 4 to 5 lb. Beef Roast
  • Preheat oven to 425°F.
  • Remove from bag and place in an ovenproof dish. Make sure to add all the liquid from the bag.
  • Cover with foil and place in the oven.
  • Heat the beef roast for approximately 30 minutes and the pork roast for approximately 40 minutes.
  • Carefully remove from oven. Let rest 15 minutes covered before serving.

Serving Sizes:

Estimate 3/4 lb. per person for Bone-In Meats

Estimate 1/2 lb. per person for Boneless Meats

Basic Meat Serving Suggestion Tips

  • Standalone meats such as chicken breast or steak allow 6 to 8 ounces per person.
  • Stuffed Meats allow 4 to 6 ounces per person.
  • Meats served in a BBQ Sauce or gravy allow 4 to 5 ounces per person.
  • When serving hamburgers allow 8 ounces per person.
  • Serving sizes vary depending on when a meal is served. Meat portions are generally 25% smaller at lunch time than dinner time.
