Our Hickory Smoked Cooked Ham Center Portion comes from our Southern Smokehouse
Country Cured Ham. We've removed the butt and shank portions from this
boneless ham leaving just the choice center portion. To ensure a tender,
delicious flavor, our ham is cooked slowly using our 24-hour method.
This also helps to recapture some of the moisture lost during the aging
process. After the ham is cooked, the center bone is removed. (We leave
the bone in during cooking because we think it adds to the flavor.) Then
the unsliced ham is trimmed leaving nothing but the best for you to slice

Ham is cured with salt, brown sugar, and pepper.
