Peanut Brittle


2 cups sugar
1 cup white syrup
1/2 cup water
1 pound raw peanuts
1 teaspoon butter
2 teaspoons baking soda


Place in a heavy sauce pan, 2 cups sugar, 1 cup of white syrup and 1/2 cup of water. Cook to a hard boil. Add 1 pound of raw peanut. Stir constantly until mixture reaches 300 degrees. Take off heat and add 1 teaspoon butter and 2 teaspoon baking soda. Pour onto a buttered cooking sheet. As soon as possible put some on saran wrap which has been sprayed with Pam. Stretch out as thin as possible. Work fast as it thickens rapidly. When cool break into pieces and store in an air tight container.
