3 to 4 large onions(thinly sliced)
small beef roast or soup meat
1 stick butter or margarine
10 beef bouillon cubes
2 tablespoons Worcestershire sauce
water(enough to cover meat)
French Bread(Thick sliced and toasted)
salt and pepper to taste
Combine the beef roast with enough water to cover the roast. Add the beef bouillon cubes and cook until the meat is done. Approximately 2 hours. Remove meat from heat and allow to cool. Save all the broth. When the meat is cool enough, trim waste and shred to be added to the soup.
In a large skillet melt butter or margarine. Slice the onion very thin as you add them to the skillet. Cook until the onions have caramelized.
In the large pot add the caramelized onion, and amount of shredded beef desired and enough beef broth to make a good soup. Cook for approximately 30 minutes.
Place hot onion soup in a soup bowl, add 1 thick slice of toasted French bread. Cover bread with shredded Swiss cheese. Put in microwave just long enough to melt the cheese. Serve.
