Oatmeal Cake and Topping



INGREDIENTS:


Oatmeal Cake:
1 and 1/4 cups boiling water
1 cup quick cooking oatmeal
1 stick butter or margarine
2 eggs
1 cup brown sugar
1 cup white sugar
1 and 1/3 cups flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon salt
1 teaspoon cinnamon

Topping:
6 tablespoons butter or margarine (melted)
1 cup brown sugar
1 cup shredded or grated or flaked coconut
1/4 cup cream or canned milk
1 cup pecans or black walnuts
1 teaspoon vanilla


INSTRUCTIONS:


Cake:
Pour boiling water over oatmeal and butter in bowl. Let stand for 20 minutes. Add eggs, brown sugar and white sugar. Sift flour, baking soda, nutmeg, salt and cinnamon together and add. Use a 9 x 13 pan well greased. Bake at 350 degrees for 45 minutes.

Topping:
Mix butter, sugar and remaining ingredients. Spread on top of warm cake. Place under boiler under low heat 3 to 7 minutes until golden brown.
