Mint Pie


Vanilla Wafer Crust:
1-3/4 cups vanilla wafers (crushed)
1/2 cup butter
1/4 cup sugar

1/2 cup butter
3/4 cup sugar
3 egg
1 teaspoon mint flavoring
2 - 1 ounce squares of semi-sweet chocolate
1– 4 ounce bar German chocolate

1 cup whipping cream
2 tablespoons powdered sugar
1/4 teaspoon mint flavoring


Melt 1/2 cup butter, add sugar and vanilla wafers. Mix well and pat into a 9 inch pie pan.

Cream 1/2 cup butter and 3/4 cup sugar. Beat 3 eggs, when well beaten, add to mixture of butter and sugar. Melt 2 squares of semi-sweet chocolate and one 4 ounce bar of German chocolate. Let cool. Then add to above mixture. Pour this mixture into pie crust and refrigerate until sit.

Whip cream. When it starts to thicken, add powdered sugar, and continue to beat until cream thickens. Fold in 1/4 teaspoon mint flavoring. Spread topping on top of pie and refrigerate until ready to serve.
