Date Pinwheel Cookies



INGREDIENTS:


1 cup brown sugar
1 cup white sugar
1 cup butter or margarine
3 eggs
4 cups flour
1 teaspoon baking soda
Pinch of salt
1 teaspoon vanilla
1 lb. dates (diced)
1/2 cup sugar
1/2 cup water
1 cup nuts (chopped)


INSTRUCTIONS:


Mix brown sugar, white sugar and eggs. Add flour, baking soda, and salt and stir together. Blend in vanilla. Set in refrigerator to harden. Cook dates, sugar and water until thick. Cool and add 1 cup of nuts. Divide cooled dough into 2 to 3 parts, according to size of cookie desired. Roll each piece into a rectangle. Spread with cool filling (date mix) and roll up like a jellyroll. Place in refrigerator to harden. Then slice and bake in a 350 degree oven until slightly brown on top.

Note: More dates can be added for additional flavor depending on personal taste.
