Combo Cookies-Oatmeal, Peanut Butter, Chocolate Chip



INGREDIENTS:


1 cup butter
1 cup chunky peanut butter* see tip
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
1-1/2 teaspoons baking soda
1 teaspoon salt
1 cup quick cook oats
1 bag milk chocolate chips and peanut butter chips (sometimes you can find them already mixed in one bar or the swirls, if not 1/2 bag of each)
1/2 or 1 cup chopped nuts (optional)


INSTRUCTIONS:


Cream butter, peanut butter and sugars until fluffy. Add eggs and vanilla, mix well. Sift together flour baking soda and salt. Add to creamed mixture. Mix until all the flour is combined. Add oatmeal, peanut and chips. Spoon by heaping tablespoons, roll into balls and place on an ungreased cookie sheet. Dip a fork in sugar and lightly press cookies down using a crisscross pattern. Bake at 350 degrees for 10 to 12 minutes, you want the edges just barely showing any color if any at all. They will be soft so let rest a few minutes on the pan before transferring to cooling rack or paper towels.

Tip: Use salted butter (the real stuff), and a less expensive brand of peanut butter because it has more oil and the cookies will spread out a little better.
