Chocolate Drop Cookies
1 cup sugar
1-3/4 cup flour
1/2 cup butter or margarine (softened)
1/2 teaspoon baking powder
1/2 teaspoon salt
2 oz. unsweetened chocolate (melted & cool)
1 cup nuts (chopped)
1/3 cup buttermilk or water
1 teaspoon vanilla
Preheat oven to 400 degrees. Combine 1 cup sugar, 1/2 cup butter or margarine, 1 egg, 2 ounces chocolate, buttermilk and vanilla in a mixing bowl. Beat at medium speed of electric mixer until well blended. Stir in flour, baking soda, salt and nuts, mixing thoroughly. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until almost no indentation remains when touched, 8 to 10 minutes. Immediately remove from cookie sheet, and allow to cool. Frost with chocolate frosting, recipe below. Makes about 4-1/2 dozen cookies.
Heat 2 squares (1 ounce each) unsweetened chocolate and 2 tablespoons butter or margarine over low heat until melted; remove from heat. Beat in 3 tablespoons of water and about 2 cups of
powdered sugar until smooth and of spreading consistency.
