Boneless chicken breast
1 pad of butter
Italian bread crumbs
Uncle Ben’s wild rice (prepared per instructions on box)
Place chicken breast between two sheets of Saran Wrap and pound until thin. Place in a dish and cover with Italian dressing to marinate for at least two hours or over night.
On a cutting board place a thinned chicken breast, and spread 1 tablespoon of wild rice mixture, and a pad of butter. Roll up chicken breast and tuck in ends. Roll in Italian bread crumbs, place in a baking dish and chill before baking.
Bake in 350 degree oven 45 minutes to one hour. Serve over wild rice with mushroom sauce poured over chicken and rice.
Chicken Kiev be frozen for later use. If frozen place in Ziplock bag. Remove frozen Chicken Kiev from bag before thawing. Spray baking dish with Pam. Place in baking dish, making sure breast are not touching.
If Chicken Kiev has been thawed, bake in a 350 degree oven for 45 minutes to 1 hour. Leave uncovered. If chicken begins to get too brown, cover lightly with aluminum foil. If Chicken Kiev is still frozen allow more baking time.
Tip: Serve with Uncle Ben’s wild rice that has been prepared per instructions on box. Good served with mushroom sauce (listed in Miscellaneous.
