6 boneless chickens
1/2 pound ham (sliced very thin)
1/2 pound Swiss cheese (sliced very thin)
Italian bread crumbs
Place chicken breast between two sheets of Saran Wrap and pound until very thin. Place in a dish and cover with Italian dressing to marinate for a least two hours or overnight.
On a cutting board place a thinned chicken breast, and cover with a generous amount of thinly sliced ham. Cover the ham with a generous amount of thinly sliced Swiss cheese. Roll up chicken breast and tuck in ends.
Roll chicken breast in Italian bread crumbs until lightly covered. Place in a baking dish and chill before baking. Bake in 350 degree oven 45 minutes to one hour.
May be frozen for later use. If to be frozen, place in Zip lock bag and freeze. To use later, remove frozen Chicken Cordon Bleu from bag before thawing. Spray baking dish with Pam. Place in baking dish, making sure breast are not touching.
After Chicken Cordon Bleu has been thawed, bake in a 350 degree oven for 45 to 60 minutes. Leave uncovered. If chicken begins to get too brown, cover lightly with aluminum foil. If Chicken Cordon Bleu is baked frozen allow more baking time
Tip: Good served with mushroom sauce.
