Butterscotch Ice Box Cookies


3-1/2 cups cake flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 cup butter or shortening
2 cups brown sugar
2 eggs (lightly beaten)
1/2 tablespoon vanilla
1/2 cup chopped nuts (if desired)


Sift together 3-1/2 cups of cake flour, 1/2 teaspoon of baking soda and 1/2 teaspoon of cream of tartar. Combine 2 cups of brown with 1/2 cup of butter or shortening and cream with electric mixer until well blended. Add the 2 eggs and beat well. Add the 1/2 teaspoon of vanilla and the sifted flour mixture, and mix well. Form dough into a round or square shape and wrap with wax paper. Put a cool place overnight. When ready to bake, preheat oven to 425 degrees. Cut dough into thin slices and place on ungreased cookie sheet. Place in oven and bake for 8 minutes. (If desired sprinkle top of cookies with chopped nuts before baking.)
