Aunt Margaret’s Pickled Beets


6 cups sugar
6 cups cider vinegar
3 cups water
3 tablespoons mix pickling spice
Fresh grown beets


Wash and remove tops and bottoms from beets. Cook in water until tender. Let cool, than peel, (the skin should remove easily). In a large pan place 6 cups sugar, 6 cups vinegar, 3 cups water, 3 tablespoons mixed pickling spice and 3 tablespoons salt. Add beets and let come to hard boil. Remove and can in glass jars.
