Apricot Bar Cookie


1 cup butter
1/4 teaspoon butter flavoring
1/4 teaspoon burnt sugar flavoring
1 cup brown sugar
2 cups flour
2 cups rolled oats
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup dates (finely cut)
1 can apricots ( No. 2 can: drained) save
1/2 cup sugar
2 tablespoons apricot juice (from above)


Combine 1 cup of butter, 1/4 teaspoon butter flavoring, 1/4 teaspoon burnt sugar flavoring and 1 cup brown sugar in a mixing bowl. Add 2 cups flour, 2 cups rolled oats, 1/4 teaspoon salt, 1 teaspoon baking soda and 1 teaspoon vanilla. Mix together thoroughly. Take 1/2 of this dough and press in the bottom of a 9 x 13 inch baking dish.

In a sauce pan put 1/2 cup of dates, 1 can of apricots, 1/2 cup sugar and 2 tablespoons of apricot juice. Boil all this until it thickens. Allow to cool, than place the filling over the dough in the baking dish. Place the remainder of the dough on top of the filling. Preheat oven to 350 degrees and bake for 30 minutes.
