Italian Parmigiano Reggiano Cheese

Parmigiano Reggiano is considered by many to be the world’s greatest cheese. It is a semi-fat hard cheese, made from raw cow’s milk and aged a minimum of 18 months. The name comes from the producing areas of Parma and Reggio Emilia, in Emilia-Romagna, Italy. This flaky and highly soluble cheese is very finely grained and ranges in color from ivory white to straw yellow. It's great grated over pasta, stirred into soup and risotto, and can be eaten in chunks with balsamic vinegar.
