Beemster Vlaskaas is similar to Gouda but richer, creamier and deeper yellow in color. This premium Dutch cheese has a purple rind that distinguishes it from all other cheeses. When translated “Vlaskaas” means Flax Cheese and historically was produced to celebrate the harvest. The recipe dates back to the Middle Ages. Vlaskaas is made from pasteurized cow’s milk. It is great when sliced thick for sandwiches.
