Mini Peanut Butter Treats

INGREDIENTS:
1/2 cup butter, softened 1 egg 1/2 cup brown sugar 1/2 cup peanut butter 1/2 cup sugar 1/2 teaspoon vanilla 1 and 1/4 cup flour 3/4 teaspoon baking soda 1/2 teaspoon salt
INSTRUCTIONS:
For cookie combine and beat together: 1/2 cup butter, softened 1 egg 1/2 cup brown sugar 1/2 cup peanut butter 1/2 cup sugar 1/2 teaspoon vanilla Combine and add to the first mixture: 1 and 1/4 cup flour 3/4 teaspoon baking soda 1/2 teaspoon salt Roll into small balls and place in a greased small muffin pan. With thumb make a “well” in each. Bake at 375 degrees for 8 to 9 minutes. The cookie will be golden brown. Remove from oven and immediately place one miniature peanut butter cup in the center of each cookie. Cool in pan for 10 minutes. Twist gently to remove from pan. Cool on rack until miniature peanut butter cup is hard.
