Hawaii on the Mississippi Cake



INGREDIENTS:
4 eggs
1 cup sugar
1/2 cup flour
1 teaspoon baking powder
1 teaspoons vanilla
1/4 teaspoon salt
1 pound pitted chopped dates
1 cup chopped pecans
INSTRUCTIONS:
Beat Together:
4 eggs
1 cup sugar
1/2 cup flour
1 teaspoon baking powder
1 teaspoons vanilla
1/4 teaspoon salt

Stir In:
1 pound pitted chopped dates
1 cup chopped pecans

Divide batter into two 9 inch cake pans that have been greased and floured. Place in a 350 degree oven and bake for 30 minutes. Remove from the oven and allow to cool. When cool break one layer into bite-size pieces. Put pieces into spring form pan evenly. Over this layer spread one can of mandarin oranges (drained) and three bananas slices. Break up the second layer and place on top of the fruit. Spread one 15 ounce can crushed pineapple (and its juices) evenly over this layer. Put a plate or other weight on top, and refrigerate at least over night.

Topping:
Whip 8 ounces of heavy whipping adding 1/4 cup of powdered sugar.
Frost top and sides of cake after unmolding. Refrigerate
until served.
